Made on Tom Burgess’ family farm in the Wicklow Hills, Coolattin Mature Raw Milk Cheddar is one of only a handful of authentic cheddar style Irish farm cheeses. It is a seasonal cheese, made in the summer when the cows are grazing clover-rich pasture, the ideal diet for cheese processing milk.
Visitors will find Tom’s cheese countrywide at farmers’ markets, at specialist shops including Malone’s Fruit Farm & Farm Shop, Ballon, Ward’s, Tullow, Avoca, Coolanowle Food Hall, Tinahely Farm, Fallon & Byrnes and good food outlets nationwide.

Carlow Farmhouse Cheese is situated on a farm in the centre of the county, milking dairy sheep for a hard cheddar-type cheese and a pecorino style cheese. Both may be matured for up to two years. In season yoghurt and ricotta is available from the ewe's milk.

Malone Fruit Farm and Farm Shop is a family-run business located just outside Ballon Village. The farm shop sells a large selection of artisan food and gifts with particular attention to local and Irish products. Fresh fruit is available in the farm shop from mid-May to early October while frozen fruit and a full range of homemade products are available all year round.
